Berry Strudel
- Serves 12 (small slices)
- Strudel Topping
- 1 cup Almond meal
- 2 tbsp Natvia
- 1 tsp Cinnamon
- 4 tbsp Butter
- 1 tbsp Vanilla essence
- 1 tbsp Almond Butter (optional)
- ½ cup Coconut desiccated
- Filling
- 250g Cream cheese
- 2 tbsp Natvia
- Juice of 2 limes or lemons
- 1 egg
- 1 cup Berries frozen
- Base
- 2 cups Almond meal
- 1 tsp Baking powder
- 2 tbsp Natvia
- 2 Eggs
- ½ cup Sour cream or yoghurt
- 2 tbsp Olive or coconut oil

Instructions
Make topping by melting butter and mixing all topping ingredients. Put to one side. Filling: Place filling ingredients in a blender and blend until smooth. Put to one side. Base: Mix dry ingredients, and then add sour cream or yoghurt and eggs. The mixture should be quite wet but not runny. Grease a lamington tray (approximately 30x 20 cm). Pour base into tray, spread cream cheese mixture over base, then a layer of berries and lastly crumble the strudel topping over the berries. Bake at 180 degrees for around 40 minutes. Top should be slightly browned and a knife inserted into the base should come out clean. This is a very special dessert and worth the effort. Serve small slices, while it is low carb keep your portion size in mind and don’t over eat.
