Low Carb Almond Coconut Cookies

A very very tasty little Low Carb Cookie. Great with a cup of coffee or tea. Maybe double the recipe!
Ingredients
- 1 cup Almond meal
- ¾ cup Coconut (shredded)
- 1 tsp Baking Powder
- 1 tsp Ginger (powder)
- ½ cup Coconut oil
- 1 egg
- ½ cup Crunchy Grain Free Granola or sliced nuts of your choice (optional)
- Grated zest of 1 lime or lemon
- 1 tsp Vanilla essence
- 1 tbsp Natvia
Instructions
- Combine, almond meal, coconut, baking powder, ginger, nuts, Natvia and zest. Add egg, coconut oil, vanilla. Roll into balls and place on a baking tray, lined with grease-proof paper. Press into cookies. Bake at 180 degrees C for around 15 minutes. Remove from oven and allow cookies to cool on a cake rack. Try adding some chopped up 85% cocoa chocolate to the low carb cookie mixture before baking or melt a little over the top when cool.

Julie, I can’t eat just one! They are too addictive!
I decided to add this cookie recipe to my saved recipes in the calorie tracking program, My Fitness Pal. The nutritional information did not come out the same, i.e., the calories for each cookie was 120 and the carbs came to 3 net carbs. I don’t know why there was such a big discrepancy in calories or carbs. I left out the granola/nuts to see what it would be without those, and here is what I got:
