Coconut Lime Cakes

Ingredients
- 2 Cups Coconut (thread)
- 400 mls Coconut cream
- 4 eggs
- 3 Limes
- 3 Tbsp Natvia
- 1 Cup Almond meal
- 2 Tsp Baking powder
Instructions
- Place 2 limes in a bowl and cover with water. Place in the microwave and heat for around 3 minutes or until limes are soft. Place cooked limes in a blender and blend until well pulped. Beat Eggs, and coconut cream, add limes and remaining ingredients and mix well. Finally squeeze in the juice of the remaining lime.
- Bake in 12 large muffin tins for around 30 minutes at 180 degrees. Cakes should be firm to touch and brown on top. Store in the fridge and serve the next day spread with butter or cream cheese.
