Low Carb Feijoa Muffins

I try not to eat too much fruit but at this time of the year, feijoas are abundant and can't be avoided!! These Low carb Feijoa Muffins are an excellent way to use and store feijoas.
Ingredients
- 12 Feijoas (half and scoop out flesh)
- 1.5 cups Almond meal
- 4 Eggs
- 200gm Butter (melted)
- Juice and rind of 1 Lemon
- 1 tsp Ginger (powdered)
- 1 tsp Baking powder
- Optional - 1 tsp Natvia,
Instructions
- Blend feijoa flesh slightly. Beat eggs, add feijoa flesh, lemon juice and rind (and Natvia). Add almond meal, baking powder, ginger and butter, and mix well. Pour mixture into 12 medium muffin tins. Bake at 170 degrees for around 20 mins or until firm to touch and browned on top. Serve with a slab of butter or cream cheese icing (mix cream cheese with Natvia and/or vanilla essence).

Did you really mean 200 gms of butter? That’s 14 Tbsp. I thought that was way too much but trusted the recipe. The fat was leaking out of the muffins.
