Creamy Zucchetti Spaghetti

Ingredients
- 2 large Zucchini
- 2 Tbsp Coconut oil or butter
- 1 medium Onion, finely chopped
- 1 cup of Vegetables of you choice chopped (capsicum, mushroom, tomato etc)
- ½ cup Cream
- ½ cup White wine or stock
- 1 tsp each of crushed Garlic, ginger or other flavours of you choice or
- 1tbsp Herb paste (optional)
- 1tbsp Wholegrain mustard
- Salt and pepper to taste
Instructions
- Using your vege peeler/mandolin make your zuccetti strips from zucchini
- Saute chopped garlic, ginger, and vegetables in oil or butter. Add cream and white wine and simmer until mixture has started to thicken. At any time add more cream or stock to get to a consistency that you prefer, to improve the flavour, or to create more or bigger servings. Add mustard, salt and pepper and stir well. At this stage taste your mixture to make sure you are happy and add more spice/herbs/salt/pepper as desired.
- Lastly add sliced zucchini and cook until soft. Not too long, you want the zucchini to hold it's texture. Serve on its own or with your favourite mince or bolognaise. Use the mince recipe from the Low Carb Shepherds Pie recipe.
