This recipe is a real winner. A little higher in carbs than some of the other cake/dessert recipes but a beautiful creamy texture and naturally sweet. A great option for a dinner party or impressing your friends. Serve with fresh cream as a dessert, however this cake does not need any accompaniments.
Ingredients
- 3 Oranges (large)
- 6 Eggs
- 1 tbsp Natvia
- 1 cup Almond meal
- 100g Butter melted
- ½ cup Coconut cream
- ½ cup Desiccated coconut
- 2 tsp Baking powder
Instructions
- Place oranges in a saucepan and cover with water. Boil for half an hour, drain and leave to cool. When cold, chop oranges in to small pieces and place in the blender. Leave the skin on two of the oranges but remove the skin from one before blending (too much skin can give the cake a slightly bitter taste). Beat eggs and Stevia together. Mix almond meal, desiccated coconut and baking powder, add to egg mixture with blended oranges, coconut cream and melted butter.
- Bake in a 25 cm cake tin at 170 degrees Celsius for 40 minutes, until cake is firm to touch or a knife inserted into the cake comes out cleanly.
