This Low Carb Jelly Cheesecake Slice is not strictly 'whole food'. It is however an easy and yummy low carb dessert to serve to your low carb and not so low carb friends and family.
Ingredients
- Base
- 100g melted butter
- 2 cups Almond meal
- 1 tbsp Almond butter (optional)
- Filling
- 1 sachet Weight Watchers Jelly (I used Blackcurrent, but there are several flavours to choose from)
- 1 cup boiling water
- 1 cup Yoghurt (full fat natural) or cream (or half and half)
Instructions
- Mix almond meal, melted butter and almond butter (optional). Press mixture into a greased 25cm springform cake tin or pie dish. Refrigerate until firm. Make the jelly topping by mixing the jelly crystals with the boiling water and stir until all crystals are dissolved, add cream or yoghurt and mix well. Pour over the firm base and return to the refrigerator for several hours, or until firm. Slice into small squares when cold and firm.

OMG, this cake is so good and was a big hit with my non LC friends. For decoration I piled Mixes berries in the centre of the cake and served with whipped cream.
