This Almond Meal Bread is a good low carb alternative to traditional bread.
Ingredients
- 1½ cups Almond meal/Almond flour
- 2 Tsp Baking powder
- 4 Eggs
- 4 Tbsp Butter (melted)
- ½ cup grated cheese (optional)
- 2 Tbsp Apple cider vinegar
Instructions
- Mix almond meal and baking powder. Add beaten eggs, melted butter, vinegar and cheese. Bake in a loaf tin at 180 Degrees C, for around 20 minutes or until the bread is brown on top and firm to touch. Remove from oven and leave to cool. When cool, slice and serve with a dollop of butter or make an Almond Meal Bread toasted sandwich filled with cheese, cold meat, onion etc.

This bread looks really good. Is it baked in a standards size loaf pan (9×5) American or a smaller tin?

Yes a standard size loaf tin is fine. The dish I used was approx. 10 x 20 cm. Enjoy!

I wasn’t sure how this bread would turn out because I substituted 4 Tbsp of coconut oil for butter and I had to bake it for 30 minutes rather than 20. I am happy to say the bread turned out absolutely perfect (at least for my tastes)!! 🙂 I just finished baking it and already ate 2 fat slices. It is crispy on the edges and soft and fluffy on the inside. Thank you for posting this amazing paleo recipe!! And so easy to prepare!!
great recipe! Have been off carbs for 6mos and this was a welcome change! Will make again. I put rosemary in mine.
