Low Carb Garlic Bread

A great side to Low Carb lasagne or any dish for that matter.
Ingredients
- 2 cups Mozzarella cheese
- 1 cup Almond meal (keep a little extra on hand in case the mixture is too soft)
- 3 tbsp Cream cheese
- 1 Egg
- 2 tbsp Psyllium husks
- Salt and pepper
- 1 tsp Italian herbs (optional)
- 2 Garlic cloves sliced finely
- 2 tbsp Olive oil
Instructions
- Melt mozzarella in microwave until soft and creamy. Add softened cream cheese and egg and mix well. Mix in pysllium, almond meal, Italian herbs and salt and pepper. Mix and roll into a ball. The mixture should hold together nicely and if it is too sloppy add extra almond meal until you can form a ball of dough. Split into 2 and roll each piece into a flat round disc shape (approx 15cm diameter). Press garlic over the top and pour olive oil over the top of each bread. Bake for around 30 minutes at 180c but check occasionally. The finished product will be browned on top, crisp at the edges and a little soft in the middle.
