This is the recipe to use up all of those vegetables leftover in your fridge at the end of the week. Cauliflower mash is a tasty replacement to traditional mashed potato.
Ingredients
- 2 tbsp Coconut oil
- 500g Beef mince
- 1 Onion finely diced
- 2 cups Vegetables (capsicum, mushroom, tomatoes, celery ) finely diced
- 1 Carrot grated
- ½ cup Tomato paste (choose an option with less than 10g per 100g of sugar)
- or
- ½ cup Coconut cream (optional, you can just add water if the mix need some moisture)
- Grated Cheese
- Cauliflower mash
Instructions
- Heat coconut oil in a pan and sauté beef mince with chopped onion and tomato paste. Add chopped vegetables and grated carrot to the cooked mince. Continue to cook on a low heat until the vegetables are well cooked. If your mixture seems to be drying out, just add water to keep at the right consistency. The longer you cook this mixture, the more the flavours will fuse through the mince. Add salt and pepper to taste. Now pour mixture into a greased casserole dish and top with Cauliflower Mash, and top with grated cheese. Bake for around 30 minutes at 180 degrees.
